North Fork’s 8 Hands Farm’s Food Truck is Not to be Missed

We came across 8 Hands Farm in the North Fork earlier this year when we went in search of a great sustainable butcher that employees organic practices that produces local, grass-fed beef. When we arrived on property, we saw the animals on the farm and noticed the 8 Hands Farm Food Truck parked out back.
After a wonderful experience inside purchasing some meat, vegetables and other procured goodies, we agreed to come back the following weekend to try their breakfast at the food truck.
We rounded up my in-laws and went to great lengths to try mostly every breakfast item on the menu. We sampled the hash and eggs, the ‘Not your momma’s’ Oatmeal’ (with a poached egg, blistered tomatoes, peppers, zucchini, with pecorino cheese and herbs), the banana bread and the breakfast sandwich with ham.
Everything was delicious and worth their high price tags--- but the breakfast sandwich was the true highlight.
Here’s what’s in it: two over medium eggs and New York State cheddar on a brioche bun with a roasted pepper sauce. You have the option of adding sausage, ham or bacon to it.
This is what I would suggest. Get the ham, and eat this the very minute it comes out of the truck. The gooiness of the perfectly cooked eggs melts right into the soft brioche bun that is slathered in this roasted pepper dream spread, all topped with the perfect melted cheddar cheese that feels like a warm hug on a crisp morning.
It’s a decently sized sandwich, which I’m sure if you ordered another small item, you could share with another person. But then again, I’m 7 months pregnant, so I’m getting my own.
